Recipe: Crispy Parmesan Kale Chips

If you are anything like me, you have recently been bombarded with the health benefits of ... ...kale!

Kale's praises have been in every magazine, health blog, and cooking show out there recently. Named a "super food" by most doctors/nutritionists because of its cancer-fighting vitamins super packed into low calorics , kale is the food of the hour! It is also considered a garnish and NOT something to be enjoyed by most people out there?! Myself included, at least until now.

I snagged this recipe for guilt-free crispy "chips" made out of kale from a friend of mine accompanied with her rants and raves. Needless to say, I was intrigued. I am happy to report that Steve and I have not only made them once, but THREE times in the past 2 days. Obsessed. Super easy, vitamin-packed, tasty, crispy just like chips, and fool-proof. This one is a must try!

Guilt-free Crispy Parmesan Kale Chips

Preheat oven at 350. Wash and THOROUGHLY spin and pat dry 7-8 kale leaves. Carefully tear the leaves from the stems and tear into "chip size" pieces. Toss in a bowl with a teaspoon of olive oil- a teeny bit just to lightly coat.

We chose garlic-infused this times but often just opt for a quick spray of extra virgin olive oil spray...

Lay them in a single layer on a parchment-lined cookie sheet. Give the entire sheet a light spray of Olive Oil Pam if you didn't get decent coverage with the Olive Oil ....
NOTE: do not salt prior to baking! It will cause the leaves to leach. Bake for 7 -10 minutes, depending on your oven. Watch the oven carefully, as the kale is easily overcooked! When done, the leaves should be vibrant green, dry, and crispy but NOT brown (or they will be bitter)...

Now comes the fun part- flavor! We chose to sprinkle all of the "chips" with fresh lemon juice, then top with Parmesan cheese, sea salt, and fresh cracked pepper...

That being said, I have read ENDLESS ideas on the net: vinegar, cayenne, paprika, curry, chili pepper, even cinnamon sugar.
