Recipe: Healthy Whole Wheat Banana Bread Muffins

We are going on Day 3 of being iced in the house per ... "Snowmageddon 2011"

I will not lie, this display of Mother Nature's wrath has produced a little cabin fever in the Nenonen Household, as stated earlier. (Note sarcasm in me saying a "little"). To keep the boys sane (and off of the xBox and television), it has become a bad Food Network cooking show over here! Ha! Needless to say, I am MORE than ready to get back to work and life. In the meantime, however, I figured I would share my latest Internet recipe find.

Sometimes "healthy" recipes can be dry and flavorless. This recipe is actually delicious- good and good for you! Had to share...
Healthy Whole Wheat
Banana Bread Muffins


Things You'll Need...

4 medium SUPER RIPE bananas, mashed
1/3 cup unsweetened applesauce
1/2 cup honey - I instead use one generous scoop of THIS organic stevia extract instead and it was PLENTY sweet with the super ripe bananas.
1 teaspoon vanilla extract
2 eggs
1 -3/4 cups whole wheat flour
2 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup hot water


Steps:

Preheat oven to 350 degrees.

In a large bowl, beat apple sauce and honey (or stevia) together with a wire whisk.

Add eggs, one at a time and mix well after each addition.

Stir in mashed bananas and vanilla extract.

In another bowl, mix flour, salt, cinnamon and nutmeg together and add it to the wet ingredients.

Add baking soda to hot water and stir. Add to mixture.

Spread batter into a greased 9x5 inch loaf pan or into greased muffin tins.

Bake for 60 minutes for the loaf pan or 18 minutes for muffins. Bread is done when browned and a toothpick inserted in the center comes out clean.
